		<description>Interesting post about honey. You mention speciality flavour honeys.  There is a misconception that monofloral honeys have had a flavour added to them - e.g. rosemary or heather. Actually the predominant flower that the bees feed on gives them the flavour.  As far as I know if an analysis shows that more than 50% of the honey comes from one particular flower then the honey can be called after that flower - e.g. rosemary. Most monofloral honeys are more than 50%. The beekeeper achieves this by placing his hives in areas where one type of flora dominates - e.g. on a moor where heather grows or in a field of lavender in France or Spain. 

Whether a honey is raw purely depends on whether it has been heated, a process which breaks down the sugar crystals in the honey and keeps it liquid for much longer.</description>
